In this recipe, I’m going to show you a really simple soup that only requires a couple of key pantry items and any leftover ingredients you may want to get rid of.

Ingredients:

Serves 2 or 4 (entree size)

  • 1 litre of chicken stock
  • 4 eggs, whisked
  • 2 stalks of green onion, sliced (only used the green here but if I had the full stem I would put the white parts into the soup, green for garnish)
  • Optional: 1 bunch of bok/pak choy
  • 2 tbsp of soy sauce
  • 1 tsp of chicken powder
  • 1 tsp of white pepper
  • Optional: Cornstarch slurry (1 tbsp cornstarch + water)

Steps:


1. Bring stock to a boil, stir and add eggs slowly into the soup in a circular motion so you create those fluffy curls.
3. Add greens (optional), spring onion (white), season with soy, chicken powder and pepper.
4. Mix in slurry – add more if you enjoy a thicker soup.
5. Garnish with spring onions and chilli oil if you like a bit of heat!
