Best Fried Rice Recipe

Ingredients
  

  • 2 eggs, beaten
  • 2-3 cloves garlic
  • 2 cups white rice, cold and cooked (day-old rice works best!)
  • 1 cup frozen mixed vegetables carrot, corn, peas
  • 1 small brown onion, diced
  • green onion, chopped
  • 2 Chinese sausage (lap cheong), thinly sliced (optional)

Seasoning

  • 1 tbsp oyster sauce
  • 2-3 tbsp soy sauce
  • Pinch white pepper, black pepper is also fine
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp chicken powder (optional)

Instructions
 

  • If you're using freshly cooked rice, let it cool completely to avoid mushy fried rice. Break up any clumps before cooking with your hands or spatula.
  • Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of oil.
  • Pour the beaten eggs into the pan, scramble until just cooked, then set aside on a plate.
  • Add the Chinese sausage and let it brown, should take 1-2 minutes or your choice of protein and cook appropriately (set aside on plate if opting for another option)
  • Add another tablespoon of oil to the pan. Sauté garlic and onion for about 1 minute until fragrant.
  • Toss in your mixed vegetables and stir-fry for 2-3 minutes until they're tender but still crisp.
  • Push the veggies to the side and add the cold rice. Stir-fry the rice with the veggies, breaking up clumps as you go.
  • Add seasoning ingredients over the rice. Mix well until evenly coated. Constantly mixing so it is fully incorporated.
  • Return the scrambled eggs (and any cooked protein) to the pan. Stir everything together and cook for 1-2 minutes.
  • Add salt, pepper, or more soy sauce if needed. Garnish with chopped green onions or sesame seeds if you like, and serve hot!
