If you're using freshly cooked rice, let it cool completely to avoid mushy fried rice. Break up any clumps before cooking with your hands or spatula.
Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of oil.
Pour the beaten eggs into the pan, scramble until just cooked, then set aside on a plate.
Add the Chinese sausage and let it brown, should take 1-2 minutes or your choice of protein and cook appropriately (set aside on plate if opting for another option)
Add another tablespoon of oil to the pan. Sauté garlic and onion for about 1 minute until fragrant.
Toss in your mixed vegetables and stir-fry for 2-3 minutes until they're tender but still crisp.
Push the veggies to the side and add the cold rice. Stir-fry the rice with the veggies, breaking up clumps as you go.
Add seasoning ingredients over the rice. Mix well until evenly coated. Constantly mixing so it is fully incorporated.
Return the scrambled eggs (and any cooked protein) to the pan. Stir everything together and cook for 1-2 minutes.
Add salt, pepper, or more soy sauce if needed. Garnish with chopped green onions or sesame seeds if you like, and serve hot!
