Fried rice is one of best dishes! Why? It’s a comforting, flavorful dish that can be made with whatever ingredients you have on hand, but nothing beats the version that’s been passed down in my family. This fried rice recipe is my go-to for a quick, satisfying meal, and it’s perfect for using up leftovers or creating a delicious dinner from scratch.

In this post, I’ll share the secret to making the best fried rice, using the ingredients and techniques my family swears by. Whether you’re a seasoned cook or a kitchen newbie, this easy recipe will elevate your weeknight dinners or impress your guests at your next gathering!

Why This Recipe Is Special:

This recipe is more than just a meal; it’s a part of my family’s traditions. It’s what we turn to when we want something comforting, easy, and full of flavor. Over the years, I’ve tweaked it to suit my tastes, but the core of it has remained the same. Whether it’s a busy weeknight or a lazy Sunday, fried rice is always the answer when I have leftover rice and want something quick, tasty, and satisfying.

Tips for the best fried rice:

  • Day-Old Rice Is a Must – As mentioned, fresh rice is too soft for frying. Make sure your rice has cooled down and sat for a while, so the grains firm up.
  • Use High Heat – Fried rice is all about that crispy texture. Don’t be afraid to crank the heat up, but keep an eye on the rice to avoid burning it.
  • Customise It – You can add whatever protein you like, whether it’s leftover chicken, shrimp, or even tofu for a vegetarian version. Just make sure to pre-cook it and add it to the pan when you toss in the eggs.
  • The Power of Butter and Sesame Oil – A drizzle of toasted sesame oil at the end adds an incredible depth of flavor that can’t be beat.

Ingredients

  • 2 eggs, beaten
  • 2-3 cloves garlic
  • 2 cups white rice, cold and cooked (day-old rice works best!)
  • 1 cup frozen mixed vegetables carrot, corn, peas
  • 1 small brown onion, diced
  • green onion, chopped
  • 2 Chinese sausage (lap cheong), thinly sliced (optional)

Seasoning

  • 1 tbsp oyster sauce
  • 2-3 tbsp soy sauce
  • Pinch white pepper, black pepper is also fine
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp chicken powder (optional)

Instructions

  • If you're using freshly cooked rice, let it cool completely to avoid mushy fried rice. Break up any clumps before cooking with your hands or spatula.
  • Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of oil.
  • Pour the beaten eggs into the pan, scramble until just cooked, then set aside on a plate.
  • Add the Chinese sausage and let it brown, should take 1-2 minutes or your choice of protein and cook appropriately (set aside on plate if opting for another option)
  • Add another tablespoon of oil to the pan. Sauté garlic and onion for about 1 minute until fragrant.
  • Toss in your mixed vegetables and stir-fry for 2-3 minutes until they're tender but still crisp.
  • Push the veggies to the side and add the cold rice. Stir-fry the rice with the veggies, breaking up clumps as you go.
  • Add seasoning ingredients over the rice. Mix well until evenly coated. Constantly mixing so it is fully incorporated.
  • Return the scrambled eggs (and any cooked protein) to the pan. Stir everything together and cook for 1-2 minutes.
  • Add salt, pepper, or more soy sauce if needed. Garnish with chopped green onions or sesame seeds if you like, and serve hot!
