Ingredients:

Serves 2

For the Broth

  • 1 litre chicken stock
  • 2-3 slices ginger
  • 2-3 cloves garlic, smashed
  • 2 green onions (whites ends), cut into 2-inch pieces
  • 1 tbsp soy sauce
  • 1 tbsp chicken powder
  • Salt and white pepper, to taste

For the Wontons (makes around 40 depending on wonton packet size)

  • 500g mince pork (or minced chicken or shrimp)
  • 1/4 cup finely chopped green onions
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 tsp cornstarch or an egg
  • 1 package wonton wrappers

Optional Garnishes

  • Chopped green onions
  • Fresh coriander
  • Sliced chili or a dash of chili oil

Steps:

  1. In a pot, bring the stock to a boil with ginger, garlic, and green onions stalks. Simmer with lid on for 10-15 minutes to infuse. Season with soy sauce, sesame oil, salt, and pepper. Remove aromatics.
  2. In a bowl, combine minced pork, chopped green onions, soy sauce, sesame oil, grated ginger, and cornstarch/egg. Mix until well-blended with a pair of chopsticks in a circular motion.
  3. Place a teaspoon of filling in the center of each wonton wrapper. Moisten the edges with water, fold in half lengthways to form a rectangle, then bring the two corners together to seal. Repeat with remaining wrappers and filling.
  4. Bring a separate pot of water to a gentle boil. Add the wontons and cook for 3-5 minutes, or until they float to the surface and are cooked through.
  5. Transfer cooked wontons to bowls. Pour hot broth over the wontons. Garnish with green onions, coriander, and chili if desired.
